Hummus

2 400g tins of cooked chickpeas, drained
3 large cloves of garlic, chopped
Juice of 3 lemons
150ml tahini paste
2 teaspoons ground cumin
1 teaspoon freshly ground sea salt
Extra virgin olive oil
Serves loads – half the ingredients if you don’t want too much!
- Put the chickpeas, lemon juice, tahini, cumin, salt and 150ml of water into a food processor.
- Turn the food processor on and wiz the ingredients into a puree – not too smooth & with some bits of chickpea still visible.
- Add a little more water or olive oil if it is too dry and adjust the flavouring with lemon juice, cumin, tahini or salt until it is exactly to your taste.
- Serve as you like, try using olive oil, paprika and parsley to garnish.
This is a fantastic plain hummus recipe to which you can add additional ingredients, such as pitted olives or roasted peppers, if you want to jazz it up.
