Chunky Green Salad

This is the perfect salad for when you’re not sure whether you’re catering for hot or cold weather – so ideal for the UK!

200g fine green beans, stalk ends trimmed
100g mange tout
2 small courgettes, trimmed and finely sliced
1 small red onion, peeled and finely sliced
Juice of one lemon
Extra virgin olive oil
2 avocados
50g parmesan, finely sliced
Sea salt and freshly ground black pepper

Serves 6 as a side dish

  • Steam the green beans and mange tout for two minutes or until just tender. Cool by running under cold water and drain on kitchen roll,
  • Toss courgette, onion, beans and mange tout in a large bowl, with lemon juice, three tablespoons of olive oil and some seasoning.
  • Prepare avocados and cut into think slices. Fold these into salad.
  • Scatter over the parmesan and pour over a little more oil.
